Banana Waffles

Light and airy Belgian waffles made from a batter containing ripe bananas.

Ingredients
  

  • 200 g flour
  • 30 g cornstarch
  • 1 tbsp. baking powder
  • 1 tbsp. vanilla paste or 1 packet vanilla sugar
  • 1 tbsp. cinnamon
  • 1 Msp nutmeg
  • 1 pinch salt
  • 2 bananas very ripe
  • 3 eggs
  • 1/4 litres milk
  • vegetable oil
  • Bananas, berries, butter and maple syrup as toppings

  • Belgian waffle iron

Method
 

  1. Preheat the oven to 120°C. Line a baking tray with baking paper and place in the oven.
  2. Mix the dry ingredients together.
  3. Mash the ripe, brown bananas with a fork until they form a pulp.
  4. Mix the eggs, milk and bananas well with a mixer. Mix in the dry ingredients.
  5. Switch on the waffle iron and preheat it.
  6. Coat the plates with a little oil. Pour in the batter and bake the waffles one after the other.
    Keep the finished waffles warm on the baking tray in the oven. This will make them even crispier. Caution: Do not stack them, otherwise they will soften again.
  7. Top with fruit of your choice and serve with maple syrup and butter.
