Healthy breakfast, olé! But we're not talking about rolling your eyes and boring snacks here, we're talking about the ultimate hipster breakfast. Avocado! Vegetables! Wholemeal bread! Poached egg! Yeah.
This is how you should start your day. Admittedly, it may not be ideal for a quick bite before work, but it's absolutely perfect for a lovely weekend morning: avocado toast with a poached egg.

Hipster breakfast par excellence

The hipster movement is right up my alley! Although my wardrobe is far from cool boho style and a full beard probably wouldn't suit me, I love the hipster era. It has given us the coolest cafés ever. I still don't understand why a flat white is so different from a good old caffè latte, but it sounds cool (that's probably the difference). I love it when the decor in coffee houses is so brilliant that you want to move in right away. And of course – the menu! Avocado toast with poached egg! Smoothiebowls! Porridge! Overnight Oats! Pancakes!

I could just dive right into everything.

Avocado is THE hipster vegetable (actually fruit. Avocados are classified as fruit). No idea why. And even though ripe avocados here never really compare to what a truly ripe avocado from the tree is like, it is still an incredibly brilliant source of vitamins.

Poaching eggs is not my strong point – here's the trick!

I take my hat off to anyone who can poach eggs properly. So, bring water to the boil, add a dash of vinegar, remove the water from the heat, stir with a spoon to create a whirlpool, crack the egg into it and use the spoon to keep pulling the egg threads over it so that it stays compact. Easy, right?

I tried it. Twice. And twice I ended up with scrambled eggs dissolved in water. And suffered a mild fit of rage.
So I decided to ignore that and opted for the simple method. It works perfectly, but unfortunately requires some cling film (plastic waste...). Take a coffee cup and hang a piece of cling film inside it. Then coat the film with a little oil, crack the egg into it and add a little salt. Twist the film tightly over the egg and spin it. This little egg bag is then simply hung in a pot of simmering water, with the end of the cling film tucked under the pot lid. Cook for a maximum of 4 minutes (it's quicker without the shell) and you've produced a poached egg that will wow your guests (and yourself 😂).

Avocado toast with poached egg

A healthy breakfast full of flavour and colour
Preparation time 20 minutes
Servings: 2 pieces

Ingredients
  

  • 2 pieces wholemeal bread
  • 1 clove garlic
  • 1 avocado ripe
  • 1 table spoons sour cream
  • 1/2 lime the juice
  • 2 eggs
  • 1 carrot
  • butter
  • Salt, pepper, olive oil

Method
 

  1. Peel the garlic clove and rub it on the top and bottom of the bread slices. Then fry the bread in a pan with a little olive oil.
    Set aside.
  2. Place a small pot of water on the hob and bring to the boil.
  3. Meanwhile, remove the flesh from the avocado and mash it with a fork. Mix with sour cream, season with lime juice, salt and a little pepper.
  4. Use a vegetable peeler to cut thin strips from the carrot.
  5. Poach the two eggs. If you can do this perfectly, great. I can't, so here's the trick:
    Line two coffee cups with a piece of cling film each. Drizzle a little olive oil over them. Crack an egg into each cup. Add a little salt. Now twist the cling film over the egg so that as little air as possible is trapped inside. Gather the film together at the top.
    Turn down the heat on the hob so that the water is just simmering. Hang the ice bags in the pan and tuck the twisted ends of the foil under the lid.
    Cook for 4 minutes.
  6. In the meantime, spread a little butter and avocado cream on the two slices of bread and top with the carrot strips.
  7. When the eggs are cooked, cut open the bags and place the poached eggs on the bread. Just before serving (or at the table), pierce the eggs with a knife so that the yolk runs over the bread.
    Sprinkle with coarse pepper from a pepper mill.
