Parmesan waffles with buffalo mozzarella and prosciutto

Delicious cheesy waffles with a classic Italian filling. Goodbye burgers, here come Belgian waffles!

Ingredients
  

For the Parmesan waffles
  • 70 g parmesan cheese
  • 125 g flour
  • 1/2 tbsp. baking powder
  • 100 g curd cheese
  • 270 ml milk
  • salt, oil for the waffle iron
For the filling
  • 1 ball buffalo mozzarella
  • 2 tomatoes
  • 6 sun-dried tomatoes in oil drained
  • 4 slices Parma ham
  • 1 handful rocket
  • coarse pepper

Equipment

  • Waffle iron for Belgian waffles
  • 2 skewers

Method
 

  1. Preheat the oven to 150°C top/bottom heat.
  2. First prepare the filling: slice the buffalo mozzarella and tomatoes, chop the dried tomatoes into pieces.
  3. Grate the Parmesan cheese and mix all the ingredients for the waffle batter well. The batter should be thick and viscous. Season with salt to taste.
  4. Preheat the waffle iron and lightly grease the plates with oil. Bake 6 waffles from the batter until golden brown.
    The finished waffles are kept warm in the oven.
  5. Optional: Bake the waffles in the oven for another 10 to 15 minutes to make them crispier.
  6. Fill three waffles per person with tomato slices, mozzarella, prosciutto and sun-dried tomatoes. Secure with skewers and top with rocket.
