And here it is: the surprise winner in this year's biscuit race! When I cut into the ginger and pistachio slices and tasted them, I was blown away. The fresh, slightly spicy flavour is simply amazing and a great change from the sweetness of the other biscuits. There's no question that these slices, like the other Christmas biscuits, are anything but low in calories. But the ginger and lemon are simply brilliant.

Ginger pistachio slices: quick and easy

Christmas biscuits and sweet treats that don't require baking are really practical. They are usually quick and easy to make. These ginger and pistachio slices are no exception. The only work involved is chopping up the candied ginger. Everything else is simply mixed together, spread on the baking tray and that's it. When you're no longer motivated at the start of baking season but already have a few biscuits under your belt and your enthusiasm is waning, I'm grateful for recipes that can be whipped up in no time – especially when they taste so good too!

As a Christmas biscuit or for a lovely tea time

In addition to being a great Christmas treat, I can also imagine these delicious ginger and pistachio slices being perfect for teatime. The British love ginger anyway (ginger biscuits are something of a staple on the island), so these slices are a perfect fit. And you're sure to receive praise for them too!

By the way, you can adjust the strength of the ginger to suit your own taste. Simply use less ground ginger in the mixture and fresh ginger in the glaze than specified, then taste and adjust to your liking. It's that easy. This way, everyone can adjust the spiciness to suit their own taste!

The glaze is rather soft. This is due to the butter and curd cheese it contains. Therefore, I did not stack my slices in a biscuit tin, but stored them on a baking tray with a lid.
If you prefer really crispy glazes, then make a simple lemon glaze with ginger and leave out the butter and curd cheese. However, you will probably need more sugar to have enough to coat the dough.

Ginger pistachio slices

Exceptional little slices with a fresh taste. Perfect for tea time or Christmas.

Ingredients
  

Für die Masse
  • 250 g butter melted
  • 500 g wholemeal biscuits
  • 50 g coconut flakes
  • 130 g ground almonds
  • 100 g candied ginger
  • 100 g roasted pistachios unsalted
  • 2-3 tbsp. ground ginger
  • 1 tube condensed milk 170 g
For the glaze
  • 400 g icing sugar
  • 80 g butter at room temperature
  • 70 g curd cheese
  • 3 table spoons vanilla paste
  • 2-3 cm fresh ginger peeled
  • 1 lemon the juice
  • 25 g pistachios finely chopped

  • Baking tray with high sides

Method
 

  1. Grind the wholemeal biscuits into as fine a crumb as possible. This can be done either in a blender or by placing them in a plastic bag, sealing it and then crushing them with a rolling pin.
  2. Chop the pistachios finely and cut the candied ginger into as small pieces as possible.
  3. Mix all the ingredients for the mixture well.
    Line a baking tray with high sides with baking paper. Pour in the mixture and smooth it out.
  4. For the glaze, grate the fresh ginger.
    Mix together the icing sugar, softened butter, curd cheese, vanilla paste and ginger, then add the lemon juice. Caution: you may need to use a little less lemon juice. The glaze should be easy to spread but not too thin.
  5. Spread the glaze over the mixture on the baking tray. Sprinkle with finely chopped pistachios. Chill until the glaze has set, then cut into rectangles or cubes.

Notes

Due to the curd cheese and butter it contains, the glaze never really hardens at room temperature, but remains soft.
