Crispy bread chips

Stale bread. Unfortunately, this is often a problem for me. Because I loooove bread, but I hardly ever eat it. I rarely eat in the evening, which would be the classic time for bread. And I cook for lunch, so I don't need any then either. So unfortunately, it often happens that I buy delicious, fresh bread on a whim, and then it goes stale because I can't finish it. When I have to throw food away, it's usually bread that hasn't been eaten—shame on me.
That's why I always find recipes for stale bread very practical. And bread chips are really the best solution, because bread isn't always acceptable, but chips are!

Homemade bread chips instead of greasy potato chips

If you need snack ideas, bread chips are really a hit. They are quick to make, use up old food that would otherwise end up in the trash, and taste sooooo good. At my house, both my father and neighbors got to try them, and everyone loved them. They were especially surprised that it was so easy to whip up something so delicious in no time. Win-win!

Which flavor you prefer is, of course, entirely up to you. To be honest, for my three variations, I just rummaged through my refrigerator and pantry to see what I had on hand. Olive oil, garlic, herbs—those things are always there. And the Thai curry paste was just an experiment that turned out really well. You just have to be careful when baking, because it browns very quickly. But the spiciness was great.
If you like spicy food, chili flakes or chili powder are also great on bread chips.

Homemade snacks are a big hit

I have since discovered that homemade snacks are incredibly popular with guests. It doesn't matter how simple they are, only that they are homemade and ‘something different’. So not breadsticks from a packet, nuts from a tin or crisps from a bag. But something special that you don't get every day.

The bread chips are completely dry, which makes them ideal for storing. If you ever have large quantities of stale bread, why not make a big batch? All you have to do is store them in a dry place, for example in a biscuit tin. This makes it really easy when you have spontaneous visitors. Or when you just want to enjoy a little snack with a glass of wine! Packaged in small bags, they also make a great little gift for guests.

Why not try my spiced and salted almonds or my homemade breadsticks? They're all really easy to bake and genuinely homemade! 🙂

Total time 40 minutes
Servings: 1 Serving
Dish: Snack
Cuisine: International

Ingredients

  • Stale bread
For the garlic bread chips
  • garlic
  • olive oil
  • salt
For the Thai-style bread chips
  • Red curry paste
  • olive oil
For the bread chips with herbs
  • Herbes de Provence dried
  • olive oil
  • salt
  • lemon peel

Method

  1. This recipe does not include quantities, as these depend on how much stale bread you have and use.
  2. Preheat the oven to 200°C top/bottom heat.
  3. Cut the bread into slices as thin as possible, preferably using a slicer. A thickness of 3 mm is ideal.
  4. For the garlic bread chips: Press the garlic and mix with olive oil. Leave to stand for a while so that the oil takes on the garlic flavour.
For the Thai curry bread chips: Mix the Thai curry paste with a little olive oil.
For the herb bread chips: Mix together the dried herbs, olive oil and lemon zest.
  5. Line a baking tray with baking paper.
  6. Coat the bread chips with the respective olive oil mixture. Add a little salt to the garlic and herb bread chips.
  7. Bake the bread chips in the oven on the lower to middle shelf for 15 to 20 minutes. They should not turn dark, but should be completely dry.
